Zein is a yellow, tasteless, odorless and low-allergenic plant protein extracted from cornmeal. It is also called corn protein, it has no E-number. Zein is the most important protein in maize and makes up 45% –50% of maize's total protein content. It is water-repellent and highly biocompatible and is used in foods and supplements as a surface treatment.
The US Food and Drug Administration (FDA) has classified zein as "GRAS" (Generally Recognized As Safe), which means it is safe to use.
